Clicking that arrow will bring up another window that has a bunch of options and all the sets you have available listed in the lower section of the window, pink outline. To choose a set just click on it. The contour sets that are in the picture that don't appear in your Photoshop are the original sets I've created.

Choosing Pattern Overlay, or Texture when the Bevel and Emboss effect is selected, will allow you to choose the pattern used. To choose the pattern just click on the one showing in the Layer Style window, purple outline.

When you do the pattern set you currently have loaded will pop up. To see a pattern's name let your cursor hover over the pattern and a tiny window will pop up. If you don't see that many patterns click the arrow in the top right corner, red outline, and an additional window will pop up. In this window will be options as well as the other sets available listed at the bottom of the window, pink section, just click one to select it. Again like the contours the sets in the picture that don't appear in your Photoshop are the sets I've created.

An fx with a tiny arrow will appear on any layers that have had effects added to them. Click the arrow to see the effects that have been added to a layer. To hide all of the effects click the eye icon next to the word Effects. Click this space again to show the effects. To hide specific effects click their eye icon. Click the eye again to show the effect.
